Bacon, jalapeño and cheese loaded kumara fries 

Serves 2

  • 1 tbsp butter

  • 1/2 a brown onion

  • 2 tbsp chopped jalapenos

  • White wine for deglazing

  • 300ml cream

  • 200g grated cheese

  • 4 rashers of bacon

  • 2 tbsp sour cream

  • 500g kumara fries (frozen works well)

  • Wilson Barbecue chip seasoning

  • Wilson Barbecue BBQ sauce

  • Spring onion for garnish


Melt butter, chopped onion and 2 chopped jalapeños and brown. Deglaze the pan with white wine and then add cream and set aside for 30 min to let the flavours develop while you prep the rest. This will be the base of your cheese sauce.

After 30 minutes, finish your cheese sauce by warming up the cream mixture and add grated cheese and mix well to melt.

Cook off the bacon and your kumara fries and season generously with Chip Seasoning.

It’s now time to build those delicious loaded fries!
