Brisket rice paper dumplings

A different take on our popular brisket dumplings, this time using rice paper!

Serves 4-6

Ingredients

Dumplings

  • 1.5kg leftover smoked brisket

  • 5 cloves of garlic

  • 5 button mushrooms

  • Handful of garlic chives

  • 2 tbsp soy sauce (add more to taste)

  • White pepper to taste

  • Rice paper wrappers - one packet

Dumpling sauce

  • 2 tbsp soy sauce

  • 1 tsp chilli oil

  • 1 tsp sesame oil

  • Dash of white pepper

Method

  1. Start by prepping your dumpling mix. Dice brisket, garlic, mushrooms and chives and mix together in a bowl.

  2. Add soy sauce to the brisket mixture and season with white pepper.

  3. Dip your rice paper into ice cold water and then place on tea towel or another surface. We started with a tea towel and then ended up finishing them on baking paper.

  4. Add one tablespoon of the brisket mixture in the middle of the rice paper and then roll up - we made ours into a square shape. Wrap again in a second piece of rice paper - this will help them stay together when it’s time to fry them.

  5. Set the roll aside while you wrap the rest of the rice paper dumplings.

  6. Once all of the ‘dumplings’ are rolled it’s time to make your dipping sauce. Mix together soy sauce, chilli oil (omit if you don’t like spice), sesame oil and a dash of white pepper.

  7. It’s now time to fry the dumplings. Heat a good glug of oil in a pan and once hot fry your time dumplings on each side.

  8. Serve with dipping sauce and garnish with chives!
