Jalapeno Popper Chicken Breasts

Making most of the NEW Chicken Rub with these jalapeño popper chicken breasts. Wrapped in bacon, because everything’s better with bacon, and cooked until the chook is juicy and that cheese filling is oozing🤙

Ingredients
Wilson Barbecue Clucking Good Chicken Rub
4 Chicken Breasts
4 Fresh Jalapeños, deseeded
15g Cream Cheese, Softened
1 Cup Mozzarella Cheese, Grated
16 Strips Streaky Bacon

𝙈𝙚𝙩𝙝𝙤𝙙:
• To a bowl, add the cream cheese, mozzarella and chicken rub, mixing well to combine. Add to a zip lock bag or piping bag and remove any air.
• Slice the top of the jalapeños off and discard any pith & seeds. Pipe the cream cheese mixture into the chillies cavity until full.
• Butterfly the chicken breasts and season with chicken rub. Add a dollop of the leftover cream cheese mixture to the middle followed buy the popper.
• Roll the chicken breasts back together tight, then wrap in 3-4 strips of streaky bacon. Secure with a couple of tooth picks.
• Season again with chicken rub, then place into a preheated bbq at 375F, cooking until they reach an internal temp of 165F. Around 45 minutes. The cooking time will depend on how big the chicken breasts are.
• Rest for 5 minutes before slicing. Watch out for the oozing cheese.
