Smoked stuffed potatoes

Ingredients

  • 2 large potatoes

  • Wilson Barbecue chip seasoning

  • 50g chopped brisket

  • 50g bacon

  • 2 tbsp spring onion

  • 1/4 cup sour cream + 2 tbsp

  • 1/2 cup grated

  • 1/4 red onion diced

Method

1. Preheat smoker to 250 c

2. Pierce potatoes with a fork and coat in olive oil and chip seasoning

3. Wrap in tin foil and chuck in the smoker until they’re soft - approx one hour

4. While the potatoes are cooking prep your ingredients for the filling - chop spring onion, red onion and brisket and cook the bacon.

5. When potatoes are cooked and soft cut across the top and scoop out some of the potato into a bowl with more chip seasoning, spring onion, red onion, brisket and bacon. Add in 1/4 cup sour cream and mix well.

6. Fill potatoes with the mix and top with grated cheese

7. Chuck back into the smoker for 15 min

8. Serve with more sour cream, bacon and spring onion
