Prawn Po Boy Sliders
We first played around with these in the August 21 lockdown and after a recent craving we had to have another crack at them.
Sliders are great for feeding a crowd or party snack.
Ingredients:
10 tiger prawns - peel and devein
10 slider buns
Lettuce
Tomato
1/2 cup panko crumbs
2 tbsp Wilson Barbecue pork rub
1 egg - beaten
Po Boy sauce
½ cup mayo
1 TBSP dijion mustard
1 tspn lemon juice
1 tspn hot sauce
1 tspn minced garlic
1 tspn Worcestershire sauce
1 tspn diced capers
1 tspn paprika
Method
Create a mixture with your panko crumbs and pork rub
Dip prawns in the egg wash before crumbing with the panko/ pork rub mix
Slice your lettuce and tomatoes ready for assembly
Slice your sliders in half so the 10 top sliders are together and the 10 bottom sliders are together
Mix all of the sauce ingredients together and set aside
It’s time to cook your prawns - heat some oil in a pan before placing the prawns in the pan. When the first side is cooked flip the prawns and cook the other side. Set cooked prawns aside.
Toast each of the bun halves.
It’s now the fun part - assembly! Start with the bottom sliders, add sauce, lettuce, tomato and prawns and then drizzle with a little more of the sauce.
Place the top buns on and slice sliders into individual burgers ready to eat!
