Bacon Wrapped Smoked Prawns

These are perfect as a snack, entree or canapé. Bacon wrapped prawns wrapped in bacon and dusted with our wonderful pork rub.

Ingredients

  • 10 tiger prawns

  • 10 rashers of bacon

  • Wilson Barbecue pork rub

  • Sriracha mayo to serve

Method

  • Set up your pit. We did these in a Weber Kettle using the indirect method at 350f.

  • While the smoker is coming up to temp wrap each prawn in a rasher of bacon. Cut off any excess bacon once the prawn is fully wrapped.

  • When all prawns are wrapped sprinkle with Wilson Barbecue pork rub

  • Place in the smoker, away from the coals and cook for 20 minutes, or until cooked. You want them to have a nice colour to them.

  • Serve with sriracha mayo.
